Add onions, garlic, and ginger together. When the soup comes out, cut other vegetables while cooking because it won't burn if the heat is low.

I will use a lot of zucchini this time.

Cut potatoes and mushrooms. Considering freezing, there are few potatoes. I think you can add more to eat and heat it when thawing.

Prepare turmeric, coriander, garam masala, and Himalayan pink salt. As for salt, I tried geland and sea spirit, but it's not delicious, so I recommend Himalayan pink salt.

Add a tomato can and water. I'm not particular about it, but I always choose organic products.

Prepare spices for tempering. I use curry leaves and fenugreek.

Mix over low heat so that it does not burn. (Use white sesame oil.)
If it smells good, I think you can turn off the heat.

I'd like to mix the tempering spices in a pot, but it's better to set aside the acu before that.

Add Manganji Togarashi, which was frozen in stock.

Add tamarind. Organic tamarind was hard to find.

I'll add hing. It is called "devil's dung" because it has a strong smell, but I like this smell, so I always add a lot of hing.

All the ingredients are added. If you feel something is missing after tasting it a little, I think you can manage it by adding salt or garam masala. I didn't add it this time.

The bath matty is not washed, only salt (sea spirit) is put in a lot of water, and boiled for 11-13 minutes, then steamed.
I try to boil it in a lot of hot water because the scent decreases when I wash it.

It obviously goes better with spices than rice oil.
I regularly make a large amount of curry, but I put it in a non-markable enamel container for each meal and keep it frozen.
